Well for #1 its only going to be humans mainly because once you start letting people play as elves, dwarves, ect. I can no longer kill orcs, goblins, and the such just on principle anymore due to the word "Humanity" starts to get blurred and it goes into a whole who is good and who is bad thing and I want to avoid that whole mess. So were going to go good old Space Marine on it and say if it isn't human, burn it. And heretic humans burn them to.

Now as for #2 wasn't really planning on going with a class system for it. mainly you describe your role and such. if I were going to go with classes I would go the basic Warrior, Rogue, Mage kinda thing and build off that.
