It's actually very noticeable on Windows. 

I can always identify a Mac user by the way text looks in their screenshots. The fact that, for you, emboldened text is hard to distinguish from regular text has more to do with the subpixel rendering that MacOS uses than the Helvetica font. Windows's ClearType makes text thinner and gives it more anti-aliasing than a Mac does.
