Speaking generally, a college professor's going to need a high level of familiarity with the subject they're teaching, unless he's teaching at some trash-tier university which seems odd considering how rich his background is. The PhD in Education won't be enough to justify being able to teach multiple subjects at a college level, and even if I grant you grade-skipping and that he's a genius and whatever, you're pushing the envelope anyway, so I can't fiat him having another degree in an appropriate subject. So, I'd either recommend turning him into a high school teacher, or adding a decade or two to his age and giving him a second degree in appropriate subject-matter.
