There are five playable races: Demons, Angels, Old Ones, Phantoms and Revenants. That said, if you want to play as a demon you have two choices: either you create one from nothing, or take one from biblical/enochian/what have you lore and adapt it to use him/her as a character.

Archdemons, archangels and other such super-powerful beings are not playable.
