My opinion...

Probably nothing if it is gem + gem fusion cause they can pretty much change shape at will

Human + gem fusion would probably be the same as above

Human + Human... I think they do but probably aren't fused long enough to be much of a problem and they both are one mind at that point so it probably wouldn't seem weird as one of them would have the experience of whatever gender they turn out as.
