[@Sol Grim] Quick Violent series that arent out in several versions-(looking at you Berserk) Hellsing Ultimate and Drifters. Quick, bloody, gore filled and gorgeous both animated and in the manga. 

Bebop was one of my first animes so it holds a special spot for me but its a nice sit down, watch a few episodes and just enjoy kind of series.

Kenshin- need we say more? Watch it.

I'm not really one for strictly violence but stupid/funny shows are always entertaining to me. Ranma 1/2, Golden Boy, and Tenchi Muyo are all good contenders. Little bit on the older side of animation but classics none the less.
