We had a giant eggplant and tiny squash though so we had to chop the eggplant up a bit before throwing it in the food processor. Only problem, my mom decided to cook double than what we needed since she wanted to use the eggplant up and the veggies were more upright instead of laying flat, so I dunno how that changed the taste. But man that stuff fills you up fast. lol.
