There are prolly some slices of cheesecake from the day before stored in the fridge, so that even if a customer makes an odd request, there is some that they can serve up to them.
Cheesecake isn't the craziest of requests, as it is a bakery. A crazy request would be a prime steak at a bakery, or for a hot camomile tea at a nightclub.
