There will still be plenty left...enough for ponytails and braids. She'll need to pass off as both man and woman in case the situation calls for it, while still being practical. Her actual hair length is...around knee-length...not unusual for the time period and her profession, and very impractical. Cutting it to at longest, a little above the hips, or even a length between shoulder-length and waist-length works. There definitely were some men with long ponytails (think Irvine from FFVIII), so she wouldn't mind...she'd actually be glad that she wouldn't have to curl and pile up her hair anymore....and she can now let it down and allow the wind to blow through it.
