I would say that being a Mage necessitates that change. As a mage, Alistair would not have had it drummed into his head that he is not meant to rule. Eamon would have never had that chance to 'brain wash' him. Rather, as a mage Alistair would be educated academically and magically, but also oppressed by the Templars. He would see becoming King as a manner of achieving freedom for Mages in Ferelden. Edit: Being a mage means that Alistair is somewhat more intelligent because his upbringing has allowed him to be. While the core character and background is there, changing his background from Templar to Mage changes his whole upbringing and education style.
