Trigun, Cowboy Bebop, and Attack on Titan are all really good animes imho. 

Also, I recommend Adventure Time if you haven't given it a try yet - it's a bit brighter and more colorful than what you seemed to be looking for but it makes a lot of nods and references to typical RPG tropes so I thought you might enjoy it for that.
