You could always go with the Imperial Remnant in any of its campaigns. Though this is mainly as I'm a big fan of the Yuuzhan Vong crisis personally as it is completely different and a lot of pilots were stumped in a lot of conflicts before they started sharing intel and later joining forces with the New Republic/Galactic Alliance.
