The mage could even be like a chemist/alchemist/herbalist. Their abilities are rooted in real world principles, but since they aren't understood it's treated as magic. A mage could specialize in brewing potions and tinctures with medicinal or destructive capabilities, but they depend on real biological and chemical factors unknown to the people.
