Once we get a navy I guess admiralty will also be an option, but that falls under military leader as well. Could they be merchants or just hire merchants to work for them as a source of income? I guess diplomats, bailiffs and such were also jobs for nobility. Well... a great number of nobles were simply married to other families to strengthen the bonds with other families, both males and females. Anyhow, most of them became clercs; a really little percentage of nobles became wandering knights, mostly in search of fame and a title, though this custom greatly disappeared as the national monarchies began to sprung.
