Joshua has the Adamantine Katana and several other blades:

Nozen-Fu: A wakazashi that can use Ice-based attacks and has a blade so cold that mist/fog constantly surrounds it

Akuma-no-Kiba: A long sword capable of harnessing Fire

Mugen: Another katana that can create replicas of itself made of energy

Mayt just has a regular olde steel Katana.

If the two fought I'd expect Mayt to have a moment of stupidity and try to parry the Adamantine Katana, which, judging by what I know of how tough that stuff is supposed to be, would end up with his getting cleaved in two.
