That was close to what actually happened. A younger Gildarts ran into Ul in the far north when he was hunting a super dangerous monster. It attacked them and Ul dispatched it herself with ease, leaving quite the impression on Gildarts. This wasn't from the original manga but it is still canon as Mashima had the idea, just someone else drew the manga.
