There's no reason to assume SE wouldn't have a wide variety of restaurants and cuisines in their headquarters as well. 

After all, the UMMA gets its client worlds solely through voluntary assimilation, so there'd be [i]thousands[/i] of worlds that have met the UMMA but didn't want to be absorbed into them.

 SE could come up to them, and say "Thank goodness you didn't do that, look at what happened to the last few dozen worlds that joined them!" BAM! Instant ally!
