So if you, say, roasted him over an open fire, it'd be dark, lean meat. He'd probably not require all that much in the way of seasoning, either.

I think the Kyubey is an alien organism, and would personally not eat it on the off chance that its biology is incompatible with my own and I accidentally give myself stomach problems or worse. 

But yeah, no excess fat, without any apparent internal organs. He'd be tasty.
