Carthay-raht are a bit bigger than Cathay, Cathay are about the same size as Imperials or Nords, 5'6" - 6'6", making Cathay-raht, by my guess, 6'6" - 7'6". Being female, she'd be a bit on the shorter end, so I would ultimately choose 6'9".
