It's really not that easy, otherwise there wouldn't be multiple books based on the difficulties of laying the dead to rest. Some are impervious, requires concentration, etc. If the vampire is new and overall weak, it'd be easy, but she also isn't written to just go around targeting any and all undead - it's about challenge, so not everyone would be a challenge. Also, as with any RP, I wouldn't really be able to just go around knocking out PCs anyway... 

It's really about -how- a character is played, anyway. I've seen god-like characters played well, and I've seen mundane humans used in some horrific cases of godmodding.
