Personally I don't find it that strange. Speed aside, a master martial artist like Lu Fau surely has the balance to pull of a quick knee to the squishy mid-area without altering the position of his hands too much. Hell, my balance is weaksause, but I think I might be able to pull it off and I've only practiced martial arts for two and a half years. And not in the "This is what I live for"-style of our characters, but a comfy "learning how to kick ass is my hobby next to video games"-kind of way. 

As for "faster than the eye"-thing. I think it is, but you have to remember that we're all masters, and that guy was a regular mook. Of course [b]we[/b] would have a chance to react, but the guy who probably doesn't even know what a proper guard looks like? Don't think so.
