If it's a stab, then yes, it will slide past, but to be safe, Vos only has to turn his torso towards her and push the blade slightly to his side with the dagger, while still having the option of stepping in for a stab of his own. Every time Vos parries with his main-gauche, it's a strong parry, as it's close to the hand, so he has considerable strength in it.
