They don't make contracts and most of them, from my conversations with Freddy all those years ago, don't know they're dead until a shamanistic magic user or necromancer tells them. So they cut a deal of servitude, but deals are not like your contracts. Freddy said that deals involve the necromancer summoning that particular spirit a certain number of times so they stay energized and aware, so you pretty much control the deal.
