I wouldn't really consider myself a hard core anime fan only because I'm a bit particular. I never got into Fairytale, I hated Naruto and Bleach, but in my opinion, the Gundam series worth watching are as follows:

Gundam Wing
Gundam 00 (first season only)
Gundam 8th MS Team
Gundam Age
Build Fighters Gundam (last I saw, was available on Youtube)
Gundam Seed and Gundam Seed Destiny

I might be missing one or two others, but this would be my main list of must watch.
