Correction: I read the manga [i]and[/i] watched the anime. Now just waiting for season 2 which is slated to air in November.
My fave is a tie between Suga and Kage. Setters forever!

I know you say no canon characters, but have you considered AUs with Haikyuu characters? (Just me reading quite a bit of Haikyuu AU fanfics lately.)

I'm ok with 1x1 or small group, not so keen with large group RPs.
