Nothing in the manga seems to have indicated that any of the characters can move faster than sound. I'm not going to get into the argument because Oda is bad about this kind of stuff in general. The concept of dodging bullets however has been clearly explained as being a predictive power rather than dodging the bullet out of sheet speed after it being fired. 

It does not matter either way. No one here can move fast as the speed of sound and my decision on the fruit has not changed.
