Well... we could have it so that they're given new names. I had kind of assumed that was the case, to be honest. Plus with so much experimentation it seems like it would be easy to manipulate their memories so that they think their names were always that way. *shrug*

Huntsmen being a thing is probably just for rule of cool. I mean c'mon, this is a canon where transforming weapons are not only a thing, but a norm. There are super powers and bunny eared girls. Is it really so hard to believe that Grimm are deadly and numerous enough to require a small (presumably, compared to the army) task force that focuses on dispatching them? At the very least it frees up your army for any possible national conflicts.
