I don't know what sort of "Sword Logic" you have, but unless Baulder and Colette both end up demons (Impossible since Colette is a vampire and thus can never fall), eating her won't let you gain her power. Nor would eating Colette allow Baulder to become a vampire, since viral transformation needs to be deliberately done from the vampire to the would-be vampire, not the other way around. 

Now I'm not saying you [i]can't[/i] eat Colette, should it make sense for Baulder to do so. But there are a lot of people IC who will object, likely violently, at Baulder desecrating her body or eating her, dead or alive. That being said I won't say you can't, just as long as you're aware of the consequences of doing so.
