Okay, so they're feeding off their own souls? I guess that makes sense. In that case, there can probably be changes to the constraints. The way I had the white giants set up was to pick up energy by siphoning naturally occurring magic. The idea was that the siphon itself had to be big, which is why their torsos are so bulky. In addition, the siphons were unstable; any breach in the thick shell around them would cause a burst of wild magic to fly everywhere and destroy the siphon, effectively killing the giant. The upside is that Toun's design of the siphon doesn't wear out. I expect that if mortals want to learn to build golems, a similar technique would be used and the knowledge would come primarily from Toun if they didn't work it out for themselves by dangerous trial and error. I also expect that when things come to fisticuffs that Toun may refine the design for use in better war constructs. The only real concern I had was the size (I got the impression that your cool dudes were about the size of humans) and the casing for the siphon. The first point can be contrived away due to using soul sparks instead of magic, but a solid blow that puts a crack in the ice of the chest would mean a very swift death.
