I always imagined that it is so because heart is the seat of the vampire's power and the main container of his undead blood where it gathers and effervesces. There's no scientific reason to it but instead a mystical one, it's like why werewolves are burned by silver and draugirs can be stopped from rising by putting a pair of open shears on their chests.
