Hmm...tough call.

Bleach has some generaly awesome fights, and belive it or not, Dragon Ball has some awesome fights back when it was more martal arts then glowing muscle bound men with crazy hairstyles shouting at eachother.

One Piece scores, with a contender for favorite being in one of the movies (I forget whitch one though XD)

Naruto has some emotionaly investing fights...

Honestly, I have seen so many cool and emotional fights I can't rank them :D
