Because I do plan to have elvish Gryphnn Riders as part of my army. Minor one since they just belong to a certain principalty but they exist.
Granted they might as well be any other creature. It just used to fit well in the NRP I take them from because elves were the descendants of prehistoric birds rather than humans and Griffins were almost the equivalent of primate apes to humans in comparison.
