As also stated, she is somewhat picky about which jobs she takes - for various reasons that will be revealed later. Meaning, if she knows they can't be killed, she'll just tell them 'no.' Will it hurt her reputation for declining? A bit, certainly, but it'd hurt less than accepting it and then be like later 'jk I quit'.

Of course, that's assuming she knows they can't be killed.
