I'd like to get Lazarus drunk just to ask him "Did you sleep with Shay yet?" but the character I think would be most fun drunk would be Jasper. Somehow he doesn't seem capable of it and if he IS, I have to wonder if he'll systematically abuse everyone around or hug them to death.
