"I have access to fresh mussels, I mean as fresh as you will ever get. They are very hard to get right but I have a recipe that if you don't like them, you will never like them. They are baked on the half shell with bleu cheese and chives." He shuts the oven off and pulls the beef wellington out. He grabs some leftover mashed potatoes from the fridge, frying them with a little cheddar cheese while the wellington settles. He cooks the mashed potatoes quickly before grabbing a slicer, cutting the food into quarters, and seasoning it with just a little triple pepper grind. He plates the potatoes first, topping it with the beef wellington. He grabs each of them a fork and knife, serving her first. "If you can't finish it don't worry, I have eaten the wellington as leftovers and they are still really good."
