I think Pre-Phantom Menace would be pretty good. Plus, there's not much canon around this time (that I can think of)so we can play around a bit more.  I also like the idea [@Amaranth] had about being a derelict or, hell, we could have a space station in the middle of nowhere. I think we shouldn't have much power and probably specialize in stealth, assassinations and espionage.  Though, considering we're still Jedi we can still rip through half an army if we needed.
