There's actually a whole subforum dedicated to tabletop roleplays [url=https://www.roleplayerguild.com/forums/39-tabletop-roleplay]right here![/url] Outside of there, it's basically up to the GM of any given roleplay as to how they do things. Some use dice rolls, some kinda just free-form everything, and all other systems you could imagine. Hopefully you'll find a concept that interests you!
