[@Reflection] It's worth noting that whatever their elemental affinity is, magecraft is something that can be taught and not everyone learns a uniform set of things. For instance, most normal mages can craft a simple familiar from an animal corpse or raise a simple bounded field. You see mages like Kiritsugu or Shirou limited to 1 or 2 things, but people like Kirei and Kayneth have studied in all sorts of fields. (I mention these two because in the anime it's mentioned what they've studied.)
