The Guild is a large world wide organisation, they recruit from recommendations and applicants. Most people apply between the ages of 16-19. It is one place that most people go to, some families dedicate their entire lineage to serving the Guild. 

The Dark shadows are much smaller and recuirt on a more, who you know not what you know basis, as they are trying to remain hidden from The Guild.
