Anything you'd see from cooks to lumberjacks to blacksmiths. Support roles are mainly for like-minded individuals who prefer to keep the order up and running, allowing the soldiers to focus on the fighting than worrying about, say, foraging or building fortications. They'll probably know how to fight, too, but an army can't march on an empty stomach or fight with faulty gear, and therefore they tend to be told to seek refuge rather than risk death on the front lines should battle take place.
