It is martial, teaching the greatbow, the use of plate armor, and the use of the longsword, shortsword, and shield, and skills based teaching horsemanship, animal husbandry, and basic survival skills.
Longsword Favor - Most Knights Of Hamfast take the longsword as their favored weapon. Their style is fluid, and makes careful use of every part of a blade explicitly to maximize the death one can deal with it. He is a particularly excellent duelist.
Might Of Man - Those from the lands under the control of the Hamfast family make great displays of strength their goal, as it shows the strength of humanity. One such feat of strength is called the Trial Of Man. In two stages, one must first defeat two unarmed Dwarves at once while similarly unarmed, then pry open their chest cavity and consume their liver and heart. This is done again with a pair of Fae. Walter Matthews succeeded.
’Neath A Dog’s Sigil - The Knight Order Of Hamfast trains with hounds, for the explicit purpose of hunting Fae and Dwarves. The animals they train follow orders well, and swiftly. Many Fae and Dwarves familiar with the various Human lineages may know well the sigil of the three gold stacked harriers on a field of green.

Bone Breaker - Out of leisure, rather than out of any particular chivalric duty, Walter Matthews learned unarmed melee fighting. His preference has developed into a skill, and he is now a troubling foe. His grapples, locks, and even punches are all built to allow him to transition into bone breakages upon successful strikes.
Hated Race: Fae - Throughout his life, Walter Matthews has developed a deep hatred of the Fae, and has made a point of killing many and collecting their scalps as a threat against the folk. He has even made a study of their anatomy for the explicit purposes of gutting them when he encounters them. He has had to suppress his urges since his exile from home... An aventail is attached. He wears a coif beneath the piece.

Chest

A brown combat jupon that stops at the upper middle arm. It has several replacement patches where heraldry would have gone. It has taken some damage but has been repaired professionally lately.
A black brigandine. It appears to have seen some use, but is otherwise in a state of good function. It fits well, and is comfortable to wear independent of additional support.
A beige gambeson. It is well maintained, and has patches and various points of repair along it. The original craftsman’s tag has been removed. It still has the Hamfast heraldry patched over the breast.
He wears a rich-looking tunic, that looks to be woven of a very fine, flaxen material. Not many pieces like it exist. It is, in fact, woven from the hair of many Fae. It glistens in the light, is soft, and has many shades of white and gold.
He carries a leather satchel, which is padded and hangs over his left shoulder and falls to rest above his belt. The leather is tanned Dwarf hide, and is very thick and reliable. The name, “Nori,” stamped into it. A cruel indicator of the skin’s previous owner? I'm working on the details of personality and dislikes and such and making them a legible form but I've got something I'm mildly content with here. Lemme know your thoughts.
