Like I think Yagyu Jubei would make an [i]awesome[/i] Saber but there's no justifying a genderbend there. And Nakazawa Koto and Sasaki Rui are both really cool historical female kenjutsu masters, but I can't really see anything to turn into an NP.

Well, other than perusing Samurai Warriors games, and picking the women from there (which is a thing I'm thinking of doing myself) I'd say that Jubei is one of the easiest ones to genderbend without even bothering to explain anything. His life was so exceedingly mysterious his exploits are barely recorded even in his own secret clan chronicles, and he disappeared from public sight for around 12 years more of less after reaching the age of 24, for nebulous reasons. If that can't be just one of the typical reasons for saying "it just so happens that he was a she all along", I don't really know what it's.

He/she is one of the options I'm considering but since I have so many things I'm going through, you can go ahead and pick him if you want.
