The story hook (coming up shortly) is that the characters will be hired to transport something.  So either a bounty hunter or outlaw could fit as long as you could envision him accepting a job like that.  

And you wouldn't be interrupting the flow at all.  The men playing pool were only mentioned in passing, so we're literally only talking about a 1 or 2 word edit.  ;)
