I suppose I'll bite as well and can give some tidbits about Edmund and Belka.

Edmund loves seafood of any kind but his most favored dish by far is boiled shellfish. Which is quite fortunate as the shellfish in the region of Belka are not only abundant, readily available for purchase, but also large.

Edmund likes to spend his free time with his baby brother Geoffrey; which is often spent playing pretend adventures in the castle garden.

Belkans may initially be cold, distant people that are slow to trust. But when you've earned their trust you'd have a loyal friend for life or a bitter foe if you managed to break their trust or gain their ire.

Belkans are proud and hardy folk that adhere to the seven knightly virtues of courage, justice, mercy, generosity, faith, nobility, and hope. 

All citizens of Belka are required to have basic military training. This backfired especially hard during the civil war.
