If Tatsunoko was enough of a dick to kill another master and take out his own servant, it would be possible to become the new master of that servant, right?

Most servants can only survive a few hours without a Master. Archer classes can survive a few days. So, if you got to the Servant in time and made the pact, I don't see why you couldn't. Snotty-brat got Mr. OP that way.
