Check out this as an example (third post down, the one with the map). The inital stats aren't chosen by the player, they are made by the GM.

If you can't/don't want to do it I believe in my WiR on the Oldguild we had someone doing them for us.

EDIT: Also, we could easily not make this a WiR and just aim for a more simplified game. Being a former WiR GM myself I will admit I couldn't handle it even with help. But then again, I'm just a douchebag 99% of the time anyway.
