Monk 1st level abilities, unarmed defense & martial arts.
With martial arts, I can get 2 attacks....by attacking with martial weapon & unarmed strike.

Rogue 1st level abilities , expertise, sneak attack, & thieves cant.

Human variant +1 +1 To any attribute of choice, so prolly my Dex & Con.
Bonus skill and Bonus feat. If we are playing 5th edition

Oh I'll list every unorthodox build I ever played:

-Dragonborn Sorcerer (Draconic Bloodline): I know it sounds typical but I actually focused in Str for this build at 1st to 15th level before multiclassing Bard (Nobody wanted a Cannaith Mandoloin), took Polearm Master feat at 4th level. And was a Tank mage able to frontline and beat the crap out of anything that came near me with my quarterstaff. Bronze DB with Bronze Bloodline and Lighting Themed spells to Zap anything after I bludgeoned foes enough. Lightning Bolt is my favorite spell in 5th edition.

-Tiefling Paladin: This was more of a character building decision as I made him ashamed of being a Tiefling so he wore a helmet that made his horns look like they were apart of the helm. Hiding his face from everyone in fear of being seen as an unholy creature.

-Halfling Barbarian: This one was a power build if I'll be completely honest; I had 18 AC at 1st level with only a shield and my unarmored defense. And I was Path of the Elements.

My cousin plays a human variant sorcerer draconic path, his skin is silver scales...he's around 15th level
