Can't really complain, got a 119 quality build by accident. And a Faith/Dex 130. 120 Solaire Cosplay Quality/Faith (why is everything quality scaling). Incomplete Farron run, pyromancer, samurai... builds. Need more builds. xD

Yes to pretty much all of that, that kind of thing seems perfectly fine. The "valid explanation" thing was only for the elf part so if that's not there you don't need to worry about it.
As for the character growth, that mostly depends on how the character starts out and what you intend. If you want them to grow a lot, by all means do so, but if you want them to be decently powerful at the start but not overpowered you don't have to. In that regard t's your choice.

I love Dark Souls and Bloodborne as well, and I've been playing DS3 pretty much nightly since getting it. I even have a build based off of Fanilly running through the game right now which has been pretty fun.
But like I said, any questions at all I'm for sure willing to answer so... ask away! Your current concept would work but you'd just have to explain why an elf had joined the order... and you'd fill the second "nonhuman" slot.
