Did you notice that the S-foils are skinnier now? I think they're XJ's, or some intermediary (since EU doesn't hold authority anymore, the XJ may not technically ever exist). But my plane knowledge says, these models are more maneuverable, less stable, faster, and more oriented towards a pure-space environment. They're less maneuverable in atmosphere than the original X-wings, but still miles ahead of the TIEs, so that's probably a winning tradeoff.
