I know that gunpowder during this era wasn't exactly implausible, just not really my cup of tea. I'll watch this for now.

Nothing stopping you from not using them. Longbows were more accurate, had much greater range and could be fired a lot faster, in any case. Guns didn't replace traditional bows in England until its stock of yew, the wood used for longbows diminished. I fail to see how gamebreaking guns could be, if real-world study is taken into account.
